The ppi is simply copied from the original file, and SPE currently has no way of changing it. However the ppi is just a hint of how big the picture should be physically and doesn't change anything about the picture itself, so it might be that you don't need to change it. Just print it out at whatever size you want, and the ppi is ignored.
