is there a way to make plain blue or any colour backgrounds eg for portraits. thanks

Yes there is!
Just select the background by using the 'Select Area' tool, and type in the search box any color you like, like 'blue' and you will see 'Blue Background' will show in the dropdownlist, just click on it and you are ready to go!
You can still change the color to any color you like, by clicking on the color box of the effect before you apply the effect.
