can I change the background color in my photos if I choose to do so. if so can I select the color

You can replace the background with any image you like using an Underlay in the Compositing tool. There are some videos on how to do that here. If you want to replace the background with a flat colour, you'd need to make an image with that color.

Why not using Select Area and choose for Background?
You just need to select the background area and choose an appropriate effect (or search for a color in the effect searchbox, like; Black, Green, Yellow..

Anyway, like always there are many ways to achieve such results
