Changing Camera set-up

I think I've mentioned I am starting a course of injections into my left eye to halt the possible / eventual blindness in the centre of my vision. I've rotten orrible osteoarthritis which combined with the eyes has left me chomping at the bit to sell off my Canon 6D DSLR kit and get myself a decent all-in-one camera.

I've a budget of around 2K so please ... any thoughts or ACTUAL recommendations based on what you use are / will be HUGELY appreciated.
