I would like to be able to set a default folder so when I click, File > Open, the "Open" dialogue box opens to a folder that I have previously chosen. This would speed up the work flow.

The open folder should always go back to the last folder you opened a file from. So if you're always opening files from the same folder, it should always end up there. Does that help? Or would you like it to always start in the same folder (like "My Pictures"), so you can navigate from there somewhere else?
